See the apple trees in bloom overlooking the beautiful Laguna de Santa Rosa, and learn about the varieties used in Ambix Spirits.
David and Zoe started Ambix Spirits in 2019 with organically grown heirloom apples. They use a special Alambic Charentais for their distillation process, which is traditionally used for Cognac and Calvados production. Then it’s into French oak to start the long aging process. David and Zoe both have advanced science degrees, allowing them to utilize old world techniques with the addition of new world innovation.
Come and see how it is all done and try the finished product! We will taste three of Ambix’s spirits, accompanied by Thibault Dotti’s small bite pairings. A French-born American with a culinary degree from the Culinary Institute of America, Thibault has over 15 years in the hospitality industry and extensive experience in Michelin star restaurants throughout the North Bay. He is actively involved in Foogal, which is dedicated to helping people eat healthier. Thibault owns Woodlands Charcuterie.
